Grown by Jairo Arcila at his Villarazo farm in Armenia, Quindio, Colombia, this Yellow Sudan Rume is one of the rarest coffees in specialty. Sudan Rume originates from the Boma Plateau in South Sudan, near the Ethiopian border, one of the genetic birthplaces of Coffea arabica. The variety is low-yielding and delicate, but produces an extraordinary cup. Some trees at Villarazo yield yellow cherries, a rare natural mutation that Arcila has specifically cultivated and separated into this distinct offering. The cherries undergo 45 hours of aerobic fermentation before being dried on raised beds for 10 days.
