This coffee offers notes of ripe peach, maple syrup, orange, and cocoa powder. The aroma is intensely fruity and floral, like opening a jar of peach preserves cut with a hint of dark chocolate. In the cup, the sweetness is lush and syrupy, with a richness that lingers long after the last sip.

Grown by Jairo Arcila at his Santa Monica farm in Armenia, Quindio, Colombia, this Castillo lot undergoes one of the most meticulous fermentation processes in specialty coffee. Only the ripest cherries are selected and transported to Arcila's La Pradera processing center, where they undergo 72 hours of anaerobic fermentation with the pulp on. Fresh peaches and wine yeast are added directly to the sealed fermentation tanks. As the peaches break down, they release esters and alcohols that fuse with the coffee mucilage, layering distinct stone fruit character into the cup. The wine yeast amplifies this, converting sugars into aromatic compounds that add complexity and depth. After fermentation, the cherries are pulped and dried on concrete patios for 10 days to an ideal moisture content of 9.5-11%.

Jairo Arcila is a third-generation coffee farmer who built six farms across Quindio with the guidance of his sons Carlos and Felipe, co-founders of Cofinet. His sustained investment in experimental processing and exotic varieties has made Santa Monica one of the most sought-after sources in Colombian specialty coffee. During harvest, his farms provide meaningful employment for the local community in Quindio.
