Grown by Jairo Arcila at his Villarazo farm in Armenia, Quindio, Colombia, this Yellow Sudan Rume is one of the rarest coffees you will find in specialty. Sudan Rume originates from the Boma Plateau in South Sudan, near the Ethiopian border, one of the genetic birthplaces of Coffea arabica. The variety is low-yielding and delicate by nature, but it produces a cup that is extraordinary. What makes this lot even more unusual: some of the Sudan Rume trees at Villarazo yield yellow cherries, a rare natural mutation that Arcila and his team have specifically cultivated and separated into this distinct offering. The cherries undergo 45 hours of aerobic fermentation before being dried on raised beds for 10 days, preserving the variety's intrinsic intensity and clarity.
